So the other day I was talking to a friend who is struggling on and off the “Diet” bandwagon. 🙂 So in honor of her controlling her appetite, I decided to share with her this yummy tomato soup recipe.
I am not gonna lie, when I first made it I was skeptical of the texture and the color.. mainly because I made it totally basic for my (then) toddler. Eventually I did some renovations to it… searched online.. combined a couple different styles and finally found a version I loved to drink myself as well… and not just force down the poor baby’s throat.
It is perfect for those on diet, or those who just wanna enjoy some hot soup..or you know.. just avain…
So here is what you will need…
- 1-1¼ kg ripe tomatoes
- 3 tbsp oil of your choice
- 1 medium onion
- chopped garlic clove (or garlic powder which ever is available)
- carrot/celery/cauliflower (you may add or subtract your choice of veggies)
- 2 bay leaves
- about 3 tbsp tomato ketchup
- some sugar..like a pinch
- 2 liters hot chicken stock (made with chicken or Chicken powder or 2 knorr chicken cubes) I personally stick to real chicken pieces but if i’m in a hurry sometimes i cheat with knorr 😛
All right so basically, you heat up the oil and sauté the onion until becomes translucent… add the roughly chopped garlic and bay leaves..toss around… add the veggies..cook on low heat for 5-8 mins.. add finely chopped tomatoes and ketchup ..add the pinch of sugar..then salt and pepper to taste..cover the lid and let the tomatoes cook for another 10 mins.. stir occasionally so it doesn’t stick to the bottom. thenn….Slowly pour in the chicken stock.. cook on medium heat for 5 mins and another 15 20 mins on low heat to ensure that the flavors infuse thoroughly.. let it cool slightly.. and blenddd into a smooth texture.. yumm
your soup is ready! if its too bland for you.. you may add red chili sauce or a dash of paprika! like i do 😀
